My Go-To Pasta Salad
Hey guys! So today I am sharing with you my ABSOLUTE favorite Pasta Salad recipe! Seriously this is my go to for bridal showers, baby showers, workweek lunches, potlucks, and basically any other time you need a large amount of delicious food! This is also a hit with my husband, he seriously requests it like twice a month in the summer!
So let's quit the chit chat and get to the good stuff!
Ingredients:
Breast meat off Rotisserie Chicken or 3 Boiled or Baked Chicken Breasts -Shredded
16 oz. (1 package) Bow-Tie Pasta, cooked & drained according to package (al-dente)
1 bag baby spinach (stems removed)
1/4 C green onions, sliced
1/2 package sliced almonds (toasted)
1 handful snow peas (cut in 3rds)
11 oz can of mandarin oranges (drained)
1/3 C craisins
1 avocado (optional)
cilantro for garnish
Dressing:
1/2 C canola Oil
1/3 C white vinegar
1/3 C Teriyaki Sauce (I like Mr.Yoshidas)
3 T sugar
1/2 t salt
1/4 t pepper
1. Combine all dressing ingredients in a mason jar or some container you can shake & shake! (It separates quite easily so you'll probably want to shake it again just before pouring over salad)
2.Cook the pasta and chicken and let cool. Store in a ziploc bag overnight soaking in 1/3 of the dressing.
3. Toast the almonds, I like to toast the almonds in a pan over the stove with some coconut oil! Prep the veggies!
4. Add all ingredients to a big bowl, top with dressing & mix, I like to use tongs!
