S'mores Pie Pops

Looking for a delicious treat to make for those warm spring nights out on the patio with friends or family? I’ve got a simple dessert recipe perfect for just that! Cake/pie pops are a thing, and for good reason because they are just so yummy, easy to eat as they are conveniently bite size, and are simple to make. For a fun twist to the traditional and classic outdoor sweet S’mores, with a pie pop style that’ll make your friends and family asking for the recipe! Not only is there a chocolatey delight inside, but also an ooey gooey center that’ll make your mouth water thinking about getting your hands on another one of them.

Ingredients:

  • 2 frozen or refrigerated 9" pie crusts
  • 1 Hershey's chocolate bar
  • Mini marshmallows
  • 1 egg
  • 6" lolly pop sticks

Step 1: Preheat oven to 350F

Step 2: Place defrosted pie crusts on counter and roll flat.

I chose to use refrigerated pie crusts because 1. they were already rolled flat 2. they were already defrosted 3. it came in a box of two. Even though the refrigerated crusts were flat I did roll them a little thinner so I could get more cuts.

Frozen pie crusts work great too! Just make sure to defrost them to room temperature and then remove them from the pie tin and roll flat.

Step 3: Using your cookie cutter, cut out as many shapes as you can make fit.

I used a 3" cookie cutter which was great but if I were to do it again I would use a larger cookie cutter. The 3" worked great but you can't fit quite as much filling inside the pie.

Step 4: Line a cookie sheet with parchment paper and arrange half of the shapes on the sheet. Make sure to offset them so there is room for the lolly pop sticks.

Step 5: Brush the beaten egg onto the edges of the shape. You can put it on the entire shape if it is a smaller cookie cutter which is what I did.

Step 6: Gently press the lolly pop stick into each of the shape making sure it is embedded half way down so it does not poke through the back but holds the pie nicely.

Step 7: Add a square of chocolate and some mini marshmallows. 

This is where I wish I would have had slightly larger shapes cut out. If you use a larger cookie cutters you can put more squares of chocolate and more marshmallows which makes them even yummier!

Step 8: Take the other half of your shapes and place them on top of the chocolate and marshmallows. You may need to stretch out the shape slightly to fit over the top. 

Step 9: Gently press down the edges of the shape then use the fork to completely seal the edges.  

Step 10: Brush the tops of the pies with egg and sprinkle with raw sugar.  

This step gives them that beautiful golden brown color and adds a caramelized layer on top which is just YUM!

Step 11: Bake at 350F for 20-25 minutes

And just like that you're done! Wasn't that easy? ENJOY!
